IN THE GLASS

GENTIOPICROSIDE

FROM CAMPARI + VERMOUTH

Formula
C₁₆H₂₀O₉
Mass
356.33 g/mol
IUPAC
(3S,4R)-4-ethenyl-3-[(2S,3R,4S,5S,6R)-3,4,5-trihydroxy-6-(hydroxymethyl)oxan-2-yl]oxy-4,6-dihydro-3H-pyrano[3,4-c]pyran-8-one

The bitter from gentian root, used across Campari, Aperol, sweet vermouth, Angostura, and most amari. Bitter compounds activate TAS2R taste receptors that evolved to detect plant alkaloids. The same machinery that makes broccoli taste bad to children also makes a Negroni taste like an adult ordered it.

TARTARIC ACID

FROM PROSECCO · the dominant grape acid

Formula
C₄H₆O₆
Mass
150.09 g/mol
IUPAC
(2R,3R)-2,3-dihydroxybutanedioic acid

The dominant acid in grapes and the reason wine tastes sharp instead of flat. Forms crystals ("wine diamonds") when bottled wine gets cold; harmless, sometimes filtered out, sometimes left in as a mark of authenticity. Without acid, wine is sugar water.

CHEMISTRY

Campari, sweet vermouth and Prosecco. It is the 'mistaken' Negroni, with Prosecco standing in for gin. CO₂ amplifies the gentiopicroside from Campari, and the absence of gin means no alpha-pinene and a lighter nose.

PROVENANCE

Mirko Stocchetto created the Sbagliato ('mistaken' in Italian) at Bar Basso in Milan, by most accounts in 1972. The story goes that he reached for the gin bottle and grabbed prosecco by accident. The mistake stuck. The drink had a quiet half-century until October 2022 when actress Emma D'Arcy described their love of 'a Negroni Sbagliato, with prosecco in it' in an HBO promotional interview for House of the Dragon; the clip went viral and global Sbagliato sales surged. Bar Basso still serves them where the mistake happened.
