IN THE GLASS

GUAIACOL

FROM MEZCAL · the smoky phenolic note

Formula
C₇H₈O₂
Mass
124.14 g/mol
IUPAC
2-methoxyphenol

The smoke molecule. In peated scotch from burning peat over the malted barley; in mezcal from the underground roasting pit; in barbecue, smoked paprika, and bonfires. One molecule covering campfire, Islay whisky, and good carnitas. The brain files all three under "fire."

GENTIOPICROSIDE

FROM CAMPARI

Formula
C₁₆H₂₀O₉
Mass
356.33 g/mol
IUPAC
(3S,4R)-4-ethenyl-3-[(2S,3R,4S,5S,6R)-3,4,5-trihydroxy-6-(hydroxymethyl)oxan-2-yl]oxy-4,6-dihydro-3H-pyrano[3,4-c]pyran-8-one

The bitter from gentian root, used across Campari, Aperol, sweet vermouth, Angostura, and most amari. Bitter compounds activate TAS2R taste receptors that evolved to detect plant alkaloids. The same machinery that makes broccoli taste bad to children also makes a Negroni taste like an adult ordered it.

CHEMISTRY

Mezcal in place of gin on the 1919 template. Guaiacol from roasted agave replaces alpha-pinene: smoke where the juniper was. Campari's gentiopicroside still carries the bitter spine. Smoky, bitter and not too sweet; the author's favorite combination.
