IN THE GLASS

GINGEROL

FROM GINGER BEER · the ginger heat

Formula
C₁₇H₂₆O₄
Mass
294.39 g/mol
IUPAC
(5S)-5-hydroxy-1-(4-hydroxy-3-methoxyphenyl)decan-3-one

Fresh ginger's heat, a phenolic ketone that activates TRPV1 (the same capsaicin receptor) at a fraction of chili-pepper intensity. Dried ginger converts gingerol into shogaol via heat-driven dehydration, which is why dried ginger reads as warmer and sharper than fresh root. Ginger beer, the Moscow Mule, and the Dark 'n' Stormy all lean on it.

VANILLIN

FROM DARK RUM · from oak barrel aging

Formula
C₈H₈O₃
Mass
152.15 g/mol
IUPAC
4-hydroxy-3-methoxybenzaldehyde

Bourbon's fingerprint, extracted from the charred American oak the law requires for aging. Same molecule as the vanilla bean's signature, so a well-aged bourbon legitimately tastes like vanilla. Chemistry, not metaphor. Cognac, aged rum, tequila reposado all extract vanillin from oak too. Different barrels, same molecule.

CHEMISTRY

Dark rum, ginger beer and lime. Gingerol delivers the burn, and vanillin from the oaked rum carries the sweet top. The float preserves a visible gradient: the rum is less dense than the sugary ginger beer, so it sits on top and mixes only on the sip. About 12% ABV.

PROVENANCE

Two ingredients with one provenance: Gosling's (founded 1806) blends, not distills, its Black Seal dark rum in Bermuda, and a naval officers' ginger-beer factory on the island supplied the second half. The Dark & Stormy is a registered trademark of Gosling's, one of the few cocktails (with Pusser's Painkiller) whose name is legally tied to a specific brand of rum. The lime juice is a later addition; Gosling's own spec is rum and ginger beer, with a lime wedge at most.
