IN THE GLASS

VANILLIN

FROM SPICED RUM · from oak barrel aging

Formula
C₈H₈O₃
Mass
152.15 g/mol
IUPAC
4-hydroxy-3-methoxybenzaldehyde

Bourbon's fingerprint, extracted from the charred American oak the law requires for aging. Same molecule as the vanilla bean's signature, so a well-aged bourbon legitimately tastes like vanilla. Chemistry, not metaphor. Cognac, aged rum, tequila reposado all extract vanillin from oak too. Different barrels, same molecule.

CAFFEINE

FROM COLA · the alertness molecule

Formula
C₈H₁₀N₄O₂
Mass
194.19 g/mol
IUPAC
1,3,7-trimethylpurine-2,6-dione

A purine alkaloid that blocks adenosine receptors in the brain, so the tiredness signal never lands. Coffee, tea, cocoa, mate, guarana, kola: all unrelated plants, all evolved caffeine independently as an insecticide. Humans inherited a tolerance for what bugs can't handle.

CHEMISTRY

Spiced rum and cola. The rum's vanillin and baking-spice botanicals ride cola's caramel and phosphoric acid. The cola's sugar softens the ethanol's bite, but the ethanol load is unchanged.

POUR // P = kH · C

Cold cola, straight from the fridge. Henry's Law: kH rises as a liquid warms, so opened warm cola is further over its CO₂ limit and sheds gas fast as it pours, before the drink is built, and the fizz collapses in the glass. A cold pour holds the carbonation through the rum mix.

PROVENANCE

Seagram's acquired the Captain Morgan Rum Company in 1944; the Original Spiced Rum arrived in the United States in 1984 and was paired commercially with Coca-Cola from the start. The Cuba Libre (white rum + Coke + lime) predates it by eight decades; the spiced-rum variant is the marketing-engineered descendant that took over American chain bars in the 1980s.
