IN THE GLASS

VANILLIN

FROM DARK RUM · from oak barrel aging

Formula
C₈H₈O₃
Mass
152.15 g/mol
IUPAC
4-hydroxy-3-methoxybenzaldehyde

Bourbon's fingerprint, extracted from the charred American oak the law requires for aging. Same molecule as the vanilla bean's signature, so a well-aged bourbon legitimately tastes like vanilla. Chemistry, not metaphor. Cognac, aged rum, tequila reposado all extract vanillin from oak too. Different barrels, same molecule.

CAFFEINE

FROM COFFEE · the alertness molecule

Formula
C₈H₁₀N₄O₂
Mass
194.19 g/mol
IUPAC
1,3,7-trimethylpurine-2,6-dione

A purine alkaloid that blocks adenosine receptors in the brain, so the tiredness signal never lands. Coffee, tea, cocoa, mate, guarana, kola: all unrelated plants, all evolved caffeine independently as an insecticide. Humans inherited a tolerance for what bugs can't handle.

EUGENOL

FROM ALLSPICE · the clove note

Formula
C₁₀H₁₂O₂
Mass
164.20 g/mol
IUPAC
2-methoxy-4-prop-2-enylphenol

The clove note, a phenylpropanoid that shows up wherever a recipe calls for clove, allspice, or nutmeg, and in rye whiskey through oak-barrel extraction. Anesthetic at high concentration; dentists used clove oil for centuries before lidocaine. The numbing sensation on the tongue from biting a whole clove is eugenol blocking nociceptor signaling at the contact point.

CHEMISTRY

Dark rum, demerara, butter, hot coffee and warm spices. Don the Beachcomber's winter tiki: eugenol from allspice, myristicin from nutmeg, caffeine from coffee and rum vanillin all work in a lipid-coated mouthfeel.

PROVENANCE

Don the Beachcomber's tiki-by-paradox: a hot cocktail meant for cold-weather tiki bars. The recipe was on Don's 'top-secret' list; bartenders couldn't access the full ingredient list. Jeff Berry's 2007 Sippin' Safari reconstructed it from Don's notes. The drink straddles tiki and Irish-Coffee territory; coffee-rum-spice is unusual but works.
