IN THE GLASS

FURFURAL

FROM VODKA GRAIN TRACE · the toasted/caramel note

Formula
C₅H₄O₂
Mass
96.08 g/mol
IUPAC
furan-2-carbaldehyde

The toasted-almond / caramel note in aged port, madeira, and amontillado sherry, formed when sugars in the wine slowly oxidize during long oxidative cask aging. Also in roasted coffee, baked bread, and any food that's been browned through Maillard chemistry. The deeper the toast on a bourbon barrel, the more furfural extracts into the spirit; the longer the madeira sits in the estufa, the more accumulates.

D-LIMONENE

FROM LEMON TWIST · citrus peel oil

Formula
C₁₀H₁₆
Mass
136.24 g/mol
IUPAC
(4R)-1-methyl-4-prop-1-en-2-ylcyclohexene

An orange rind, squeezed, throws a spray that catches the light. That's d-limonene boiling off. It's roughly 95% of orange peel oil by mass, and the molecule that puts the "orange" in orange anything. Used industrially as a green solvent because the chemistry that dissolves citrus oils also dissolves greasy machinery. The expressed-peel garnish on a cocktail is delivering vaporized limonene to the rim of the glass.

CHEMISTRY

Vodka in place of gin. The juniper terpenes drop out, leaving near-neutral ethanol against dry vermouth's oxidized wine notes. The ABV is the same, about 30% in the glass, and only the aroma changes.

PROVENANCE

The swap tracked vodka's mid-century rise: aggressive Smirnoff marketing, the 'leaves you breathless' campaign, and a fictional British spy ordering his shaken. By the 1970s the vodka version outnumbered the original in American bars.
