furan-2-carbaldehyde
The toasted-almond / caramel note in aged port, madeira, and amontillado sherry, formed when sugars in the wine slowly oxidize during long oxidative cask aging. Also in roasted coffee, baked bread, and any food that's been browned through Maillard chemistry. The deeper the toast on a bourbon barrel, the more furfural extracts into the spirit; the longer the madeira sits in the estufa, the more accumulates.
The acid that puts the bite in green apples, unripe stone fruit, and rhubarb. Wine carries it from the grape, but most reds lose it during malolactic fermentation, where bacteria convert the sharp malic into the rounder lactic, swapping "tart" for "creamy." Whites that skip MLF (most Sauvignon Blanc, most Riesling) keep the malic edge as part of their crisp identity.
An orange rind, squeezed, throws a spray that catches the light. That's d-limonene boiling off. It's roughly 95% of orange peel oil by mass, and the molecule that puts the "orange" in orange anything. Used industrially as a green solvent because the chemistry that dissolves citrus oils also dissolves greasy machinery. The expressed-peel garnish on a cocktail is delivering vaporized limonene to the rim of the glass.
Vodka, cranberry and grapefruit. Malic acid from cranberry, with d-limonene and naringin from grapefruit, makes a natural bitter-tart structure, and the vodka stretches the juices into a long, refreshing pour. Naringin is a flavanone glycoside, bitter in trace amounts. The grapefruit keeps the cranberry from reading sweet.
PROVENANCE
One of the 'Cape Cod' family of cranberry-based vodka highballs that emerged with the post-war cranberry juice boom (Ocean Spray had sold Cranberry Juice Cocktail since the 1930s). Sister cocktails: the Cape Codder (vodka + cranberry + lime), the Madras (vodka + cranberry + OJ), the Bay Breeze (vodka + cranberry + pineapple). The Sea Breeze is the bitterest of the family thanks to grapefruit's naringin.
