IN THE GLASS

VANILLIN

FROM SCOTCH · from oak barrel aging

Formula
C₈H₈O₃
Mass
152.15 g/mol
IUPAC
4-hydroxy-3-methoxybenzaldehyde

Bourbon's fingerprint, extracted from the charred American oak the law requires for aging. Same molecule as the vanilla bean's signature, so a well-aged bourbon legitimately tastes like vanilla. Chemistry, not metaphor. Cognac, aged rum, tequila reposado all extract vanillin from oak too. Different barrels, same molecule.

2-PHENYLETHANOL

FROM DRAMBUIE HONEY · the rose-honey aroma

Formula
C₈H₁₀O
Mass
122.17 g/mol
IUPAC
2-phenylethanol

The rose aroma: exactly the molecule that gives rose petals their scent, and one that yeast produces during slow fermentation. Mead, sweet wines, and certain Belgian ales carry it; a sherry that smells of honey and roses is leaning on phenylethanol. Industrial perfumery uses synthesized 2-PE because rose absolute costs more than gold by weight.

CHEMISTRY

Scotch and Drambuie: essentially a honey-sweetened Scotch. Vanillin comes from the oak, and Drambuie's honey-and-herbs layer adds depth without much dilution. The pour is near neat, and congener load is high.

PROVENANCE

The combination of Scotch and Drambuie predates the name by decades, but the Rusty Nail moniker was popularized in the 1960s through the Rat Pack and the New York bar scene. Wondrich traces the pairing to a 1937 'B.I.F.,' named for the British Industries Fair; it also went by 'D&S' and 'Little Club No. 1.' The proportions vary from 2:1 Scotch:Drambuie to equal parts depending on era and palate.
